Orange blossom is a fragrant white flower that grows on the bitter orange or Seville orange tree. But don't let the "Seville" in the name fool you as to where the species comes from. Little clusters of flowers appear in February before the bitter orange ripens on the tree. The flowers have a volatile fragrance and can be steam-distilled once picked. Distillation produces two natural treasures: the fragrant essential oil (also known as neroli) and orange blossom water which are like elegant sisters with their own personalities.

Provence orange blossom came with Arab traders. It travelled up to Sicily and won over France as it passed through Provence: as so often happens, the history of fragrant ingredients, species and aromatic plants repeats itself. It stuck to the tried and tested botanist route winding through Provence but the Princesse des Ursins, Marie-Anne de la Trémoille, is the one who brought orange blossom to all the European courts in the 17th century. The East had already fallen in love with the flower where every garden had this heavenly bloom scenting the air. Some luxuries last forever...
